RECIPE: PEANUT BUTTER & CHOCOLATE CRUNCH BARS

I must admit, I never really blog about food on Sarah's Style Statement but I was so impressed with these Pampered Chef Peanut Butter & Chocolate Crunch Bars I just had to share this recipe - it's the perfect naughty treat for a lazy Sunday or late night snack although I will be honest, it's a calorie bomb but who cares when it's the weekend!?

For this recipe I used the following ingredients:-

1/4 cup (50ml) dry-roasted peanuts
- 3 cups (750 ml) pretzels twists with approx 2/3 cup (400ml) coarsely crushed and left aside
- 3 cups (750 ml) Rice Krispies 
- 3/4 cup (175 ml) un-salted butter 
- 1 bag (10.5 oz or 250g) miniature marshmallows
- 1/2 cup (125ml) golden syrup
- 3/4 jar of Peanut Butter
- 1 cup of Chocolate drops                                                                                                                   


The beauty of this recipe is you only need to use your fridge and microwave so there's less mess involved, plus they are also ready quicker so there's no waiting around!
To make one tray all you need to do is:-
1.  Coarsely chop the dry-roasted peanuts using a knife and set aside. Place pretzels into large resealable plastic bag and coarsely crush using a rolling pin and set aside 1/3 cup (75 ml) of the pretzels. Place remaining pretzels and cereal in a mixing bowl.
2.  Place 6 tbsp (90 ml) of the un-salted butter in another bowl and microwave on high for 60-90 seconds or until melted. Once melted add marshmallows and microwave again on high for 60-90 seconds. Stir until the marshmallows and butter are completely melted. Then add the marshmallows and butter to the pretzels and rice krispies and mix well. Once mixed, spread the mixture evenly into a medium sized baking tray. 
3. In a separate bowl, combine 2 tbsp (30 ml) of the butter and half of the golden syrup and microwave uncovered on high for 60-90 seconds or until melted, stirring every 30 seconds. Stir in a couple of tablespoons of peanut butter and mix until melted (the mixture will be thick). Then spread the peanut butter and syrup mixture over the mixture in the baking tray.
4. For the chocolate ganache topping, place remaining butter and golden syrup in a small bowl. Microwave on high for 60-90 seconds or until melted. Stir in all the chocolate drops (add more if necessary) and mix until smooth. Spread the chocolate ganache evenly over peanut butter mixture in the baking tray. To decorate sprinkle with peanuts or pretzels, here I've used pretzels.
5. To set, place in the fridge for 30 minutes until the ganache is set. Once you are happy that the mixture is solid, cut into squares, make a cup of tea and enjoy!
